Lentil Stuffed Peppers

Ingredients

  • ½ cup (100g) brown rice (dry)
  • ½ cup (100g) green lentils (dry)
  • 2 cups (480ml) water (for soaking)
  • cup (100g) onions
  • ¾ cup (120g) carrots
  • 2 tbsp cooking oil
  • 1 cup (250g) tomato purée
  • ¾ cup (200ml) water (for sauce)
  • 1 tsp salt
  • 1 tsp paprika
  • ½ tsp oregano
  • ¼ tsp pepper
  • 4 pc (4whole) bell peppers
  • 3 cups (720ml) water (for steaming)

Instructions

  1. Soak rice and lentils in water for 8–12 hours, then rinse.
  2. Chop onions and carrots, sauté for 5 minutes in oil.
  3. Add rice, lentils, tomato purée, water, and spices. Simmer for 25 minutes covered.
  4. Cut tops off peppers, remove seeds, fill with stuffing.
  5. Pour water into a pot, insert a steamer basket.
  6. Place peppers, cover, and cook for 40 minutes until soft.
