Lentil Stuffed Peppers

Ingredients
- ½ cup (100g) brown rice (dry)
- ½ cup (100g) green lentils (dry)
- 2 cups (480ml) water (for soaking)
- ⅔ cup (100g) onions
- ¾ cup (120g) carrots
- 2 tbsp cooking oil
- 1 cup (250g) tomato purée
- ¾ cup (200ml) water (for sauce)
- 1 tsp salt
- 1 tsp paprika
- ½ tsp oregano
- ¼ tsp pepper
- 4 pc (4whole) bell peppers
- 3 cups (720ml) water (for steaming)
Instructions
- Soak rice and lentils in water for 8–12 hours, then rinse.
- Chop onions and carrots, sauté for 5 minutes in oil.
- Add rice, lentils, tomato purée, water, and spices. Simmer for 25 minutes covered.
- Cut tops off peppers, remove seeds, fill with stuffing.
- Pour water into a pot, insert a steamer basket.
- Place peppers, cover, and cook for 40 minutes until soft.
