Pumpkin Purée

Ingredients
- 2½ lb (1.2kg) pumpkin
Instructions
- Remove seeds from pumpkin, cut into large chunks.
- Line baking sheet with parchment paper, place pumpkin skin side up.
- Bake in the oven at 200°C (392°F) for 45 minutes until soft.
- Cool, scoop out flesh with spoon, blend into purée.
